Turmeric – White
Organically grown on our farm near Biggenden, we grow the way nature intended – naturally. We do not use chemicals. We hand weed and when we feed our plants, we use only compost, chemical free composted cow manure & organic composted chicken manure. The rain water we use to water our plants is saved in a large fish filled dam on our property & this means extra natural fertiliser thanks to the fish.
We grow in long raised beds & hand harvest our turmeric. We trim the roots, & dry the ‘hands’ of turmeric for a couple of weeks. We then brush any dried residue dirt off & pack in paper bags. We don’t add time, & therefore dollars, to the product by washing it. Just rinse when you use it & there’s no need to peel the turmeric either.
White turmeric is a much stronger taste than the orange turmeric. Still great in hot dishes, though we personally find it too strong for salads. Use grated/sliced/chopped in soups, casseroles, curries, pasta sauces, fish dishes & stir fries. You can also use it in dishes along with the orange turmeric. Play with the amounts to suit your taste buds.
White turmeric’s health benefits are that it purifies the blood, is an antiseptic, aids digestion, is good for the immune system & helps soothe colds. I’ve used it as a tea if I’ve felt a cold trying to get me – put thick slices of white turmeric, that have been crushed under the flat blade of a knife to release the flavour, along with your choice of other ingredients like honey, ginger & lemon into a cup & pour in hot water. Let it steep a few minutes, stir & drink; again play with flavour & amount to suit your tastes. A paste can also be made from white turmeric & applied to cuts and abrasions to assist healing.
It will store well in your pantry/cupboard in the paper bag. But…come October, it will be trying to shoot & grow. So, I’ve found the best way to have your turmeric for longer is to spend some time grating it all and freezing it in thin layers between baking paper in a container. A thin layer enables you to easily break off what you need & pop the rest back in the freezer. It keeps it better this way than as whole pieces, which tend to defrost soft.
